Another traditional "White Trash" Recipe!

And I quote...


Onion Pie

1/2 stick oleo, melted
2 large onions, chopped up

Fry onions in oleo until limp but done't brown. Let "em cool slightly and add 1 tablespoon flour, 1/3 can evaporated milk, 1/8 teaspoon salt and one cup of sweet milk. Cook all above ingredients until thick. Beat three eggs in a bowl and add to mixture. Pour into 9 inch unbaked pie shell. Top with another pie shell. Brush with milk. Make at 425 degrees for 30-40 minutes. Serve with Ham-Lima Salad

(By the way, I love how it looks like two ingredients is all you need, but not so much as you read on.)

Ham-Lima Salad

Chop your four hard-boiled eggs. Cut two cups of ham into 1/2 inch cubes. Add two cups of drained, cooked green lima beans, one cup of chopped celery, 1 tablespoon finely chopped onion, 1/ 2 cup Blue Plate Mayonnaise, 1/2 teaspoon curry powder, salt and pepper. Mix, taste for salt, chill an hour or more to blend flavors. Then hop your plate! 

Stella Lee's Punch Pie

Take an old apple pie (one from the day-old rack at the supermarket) and punch holes all over the top crust after it's baked. Then pour on the rum or brandy, making sure it gets in all the holes. Now that's good enough, to to make it really something, sprinkle on a little sugar(now don't load it down) and set fire to it. that's what you call making it prissy.
